Of course, people frequently (and without awareness) use this as a rhetorical device to demean something they disagree with (I had a roommate say, “That’s so 20th century…” But it was about something taking place in the 21st century, so by definition, was not 20th century). I’m sick of rhetorical manipulation like this.
After looking into the phrase though, I don’t think “bygone” was actually meant to be about people. It’s about events. It’s saying “this event happened in the past, let’s let it go and be in the present.” But it has morphed to where people think of the word as being about people instead of events.

I would also argue that an earlier age may not necessarily refer to an early societal as as defined by historians, but simply an earlier point in time, when people (or group dynamics, etc) were in a different place in their life,sometimes physically, but usually emotionally.
I conclude that the phrase “let bygones be bygones” is a valid phrase referring to a event that happened in a person’s past. In this case, Amber stabbing Sal’s hand when they were much younger.
And that at this point in society you can just say bygones with the implication that you intend the whole phrase “let bygones be bygones”.
